INGREDIENTS
· 4 tablespoons extra virgin olive oil
· 1 tablespoon fresh squeezed lemon juice
· 1 tablespoon tarragon, or other herb-flavored vinegar
· 1 teaspoon dried or fresh tarragon leaves
· 1 teaspoon Dijon mustard
· 1/2 teaspoon lime zest
· salt and freshly ground black pepper to taste
INSTRUCTIONS
Mix all ingredients, shaking vigorously.
Dress and toss the salad just before serving.
